Snow in Fiasco!

Ok so my wonderful husband begged me to go out in the crazy snow storm ( just kidding.. we had maybe 5 inches) to go get groceries to cook him supper tonight.

I gladly refused.

Tonight I slapped together what I call "would have been chicken parm"

I pretty much just took chicken breasts, covered it with garlic powder, pepper, salt, and a tad pinch of paprika.  Seared it in olive oil until the outside was nice and brown.

Took some already made marinara sauce from the great Newman guy that has his face on salad dressing bottles also.  Put that in a casserole dish and popped that sucker in the oven (with the chicken) on 400*.

Your probably asking yourself... " why is it called would have been chicken parm?"

I have no Parmesan cheese... I know.. its a sad day.  So I'm stuck with a packet of mexican blend cheese I picked up at Walmart the last time I was out. . . So lets hope that this turns out okay because if not then I don't think I'll hear the end of it!

Here is the finished product!

To some it may look gross. but it was so delish!  The Mexican cheese actually worked just as good!

Here is a better picture of the finished product :)

I say yum!

  1. Weird! I thought I made a comment.

Anywho, my girlfriend and I fail at cooking chicken. We never cook it long enough

  2. If you pan sear it for maybe 3 minutes on each side, then stick it in the oven for 20 minutes ( well just watch it) then it shouldn't be that bad! I will try cooking chicken later on and get you the right time limit so you can try it in your oven ok? :)
